When I first started playing, I just wanted to get to some fun combat. Instead I found myself running cargo mission after cargo mission one little hold's worth at a time to get up enough cash to buy an Eagle and actually get to the fun stuff. Now that I have a whole fleet of ships, I can specialize. To my surprise I find that taking cargo missions from time to time is refreshing and fun, and reasonable lucrative. It's a good excuse to take out one of my lesser-used ships and remind myself why they're useful and why I love them. And yes I have hauled slaves. Imperial slaves. Don't judge me.
